ROAST PORK WITH SAVORY SAUCE 
3-5 lbs. loin of pork
Dijon style mustard
Freshly ground black pepper
Thyme
Rosemary (optional)

Rub pork with mustard. Sprinkle with pepper, thyme and rosemary. Rub seasonings into pork. Roast on rack in pan at 350 degrees for 2 1/2 to 3 hours. Even better flavor if roasted on covered outdoor grill.

SAUCE:

1 tbsp. butter
1 tbsp. oil
1 sm. onion, chopped
1 tbsp. vinegar
1 (8 oz.) can tomato sauce
1 tsp. Dijon style mustard
1 sm. dill pickle, chopped
1 tbsp. parsley

Saute onion in butter and oil over medium heat until golden and soft. Add vinegar and tomato sauce; bring to simmer. Add mustard, pickle and parsley. Keep on low heat just until heated through. Don't boil or pickle will become tough. Serve sliced roast with sauce to pour on top.
