EGG FU YOUNG | |
6 eggs, slightly beaten 1/2 tsp. salt 1/4 tsp. monosodium glutamate 1/4 tsp. soy sauce Dash or 2 of pepper 1 stalk green onions, sliced fine 1/2 c. Chinese yams, sliced fine 1 c. bean sprouts May use ham, shrimps, sweet pork. Fry vegetables in a small amount of oil until almost done. Cool then mix in eggs. Heat pan with oil and fry half the mixture at a time. Cook as you would for pancakes on high and then medium heat. If you wish to have gravy make it with soup stock just like always. Put eggs on platter and pour gravy over just before serving or just pour oyster sauce or soy sauce over omelette. |
