SWEET POTATO PIE | |
2 1/2 c. cooked, mashed sweet potatoes 1/4 c. sugar 1/2 tsp. salt 1/4 tsp. nutmeg 1/2 tsp. allspice 1/4 tsp. cinnamon 1 tbsp. butter, melted 3 eggs, beaten 3/4 c. milk 2/3 c. maple syrup 1 tsp. vanilla 1 unbaked 9 inch pastry shell Whipped cream (optional) Combine first 7 ingredients in a large mixing bowl; stir well and set aside. Beat eggs, milk, syrup, and vanilla, stirring until blended. Gradually stir egg mixture into sweet potato mixture; pour into pastry shell. Bake at 425 degrees for 10 minutes. Reduce heat to 325 degrees and bake 1 hour and 5 to 10 minutes until knife inserted comes out clean. Cool; serve with whipped cream. |
