BAKED FISH (GREEK STYLE) 
1 lb. haddock
1/2 lemon
1 lg. onion, chopped
8 oz. can tomatoes or sm. can tomato sauce
1/2 c. olive oil
1/2 c. chopped parsley or spearmint
2 cloves garlic
Pepper to taste (salt, if you use it)
1 c. water

Marinate fish in lemon juice. Mix onions, tomatoes, water, oil, parsley, garlic, pepper, and salt. Lay fish in 9 x 13 inch pan and put sauce over it. Bake at 350 degrees for 45 minutes to 1 hour.
