MARMALADE MUFFINS 
1 1/2 c. sifted flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg, beaten
3/4 c. milk
1/4 c. melted shortening
1 c. oat flakes
1/3 c. marmalade or preserves

Sift first four ingredients together. Stir together egg, milk and shortening, and add this liquid to dry ingredients, blending only until dry portions are moistened. Fold in oat flakes. Spoon into greased muffin rings, filling about 2/3 full. Make a little well in the center of each muffin and put a generous dab of marmalade or preserves in the indentation. Bake at 400 degrees until lightly brown, about 20 minutes or so.
