SURPRISE MUFFINS 
2/3 c. unsifted all-purpose flour
2 tbsp. sugar
1/4 tsp. salt
3 tbsp. shortening, melted
1 1/2 c. Post Raisin Bran or Post 40% Bran Flakes
1/4 c. (about) preserves
2 1/2 tsp. baking powder
1 egg, beaten
3/4 c. milk

Preheat oven to 425 degrees. Mix flour, sugar, baking powder, and salt. Combine egg and milk; add to flour mixture; then add shortening and mix only enough to dampen flour. Fold in cereal.

Place small amount of batter in 8 greased medium muffin pans; top batter in each pan with about 1 teaspoonful preserves. Add remaining batter, filling muffin pans about 2/3 full. Bake for 15-20 minutes or until muffins spring back when done.
