CINNAMON AND NUT MANDEL BROT 
1 1/4 c. sugar
1 c. vegetable oil
4 eggs
1 c. chopped walnuts or pecans
2 tsp. vanilla
3 1/4 c. all-purpose flour
1 c. quick or old fashion oats, uncooked
2 tsp. cinnamon
1 1/2 tsp. baking powder

Combine 1 cup sugar, oil, eggs, nuts and vanilla in or with a mixer - add flour, oats, cinnamon, baking powder, mixing well. Dough will be thick.

Spray a cookie sheet with Pam and heap all the dough onto the cookie sheet - wet hands and flatten out dough to cover sheet evenly. Bake at 350 degrees for about 20 minutes or until top is brown.

Remove from oven and cut entire recipe into slices or bars 1/2 inch x 2 inches approximately.

Turn slices onto their sides - combine 1/4 cup sugar and 1 teaspoon cinnamon - sprinkle over the slices - return to oven and bake 10 to 15 minutes until they are golden brown and crisp.

Remove from cookie sheet and cool - store in covered container or freeze in zip lock bags.
