FRESH PEAR AND HAZELNUT SALAD 
2 fresh pears, sliced with skins on
1 head red leaf lettuce, washed and dried
1/2 c. roasted hazelnuts, finely chopped
1 c. red grapes, halved and seeded
1/2 c. Gorgonzola cheese

DRESSING:

3 tsp. Dijon mustard
6 tbsp. olive oil
2 tbsp. heavy cream
2 sliced shallots, or green onions
1 tbsp. rice vinegar

Make dressing as above, add grapes. Slice fresh pears and marinate in the dressing. Wash and dry lettuce and break into bite size pieces. Assemble lettuce on plates, add marinated grapes and pears in equal amounts to each plate. Top each plate with Gorgonzola cheese and hazelnuts.
