HAM AND POTATO BREAKFAST
CASSEROLE
 
1 (6 oz.) pkg. hash brown potatoes
1 1/2 cups water
1 cup milk
1/2 cup sliced green onions (with tops)
1 tsp. salt and pepper
5 eggs, beaten
1 1/2 cups shredded Cheddar cheese
1 cup chopped fully cooked smoked ham
1 tsp. dry mustard
paprika

Preheat oven to 350°F.

Mix all ingredients, except paprika, in large bowl. Pour in ungreased 12 x 7 1/2 inch baking dish. Sprinkle with paprika.

Bake at 350°F until inserted knife comes out clean, about 40 to 45 minutes.

Makes 6 servings.

I doubled the recipe because I needed a bigger casserole. It took forever to cook and even though the knife came out clean, it was watery. The flavor, however, was very good. I would definitely cut back on liquid.
