SEVEN LAYER CASSEROLE 
1 c. uncooked rice
2 (8 oz.) cans tomato sauce
1/2 c. chopped green pepper
4 strips bacon
1 (8 oz.) can whole kernel corn, drained
1/2 c. chopped onion
3/4 lb. ground beef

In a 3 quart casserole with a tight fitting lid, layer ingredients in the following manner:

First Layer: Put uncooked rice in casserole.

Second Layer: Add to casserole can of whole kernel corn, drained. Sprinkle with salt and pepper.

Third Layer: Pour into casserole 1 can tomato sauce and half can of water.

Fourth Layer: Add onion and green pepper.

Fifth Layer: Add uncooked ground beef. Season with salt and pepper.

Sixth Layer: Pour in second can of tomato sauce and 1/4 can of water.

Seventh Layer: Cut bacon strips in half and lay over casserole.

Cover casserole and bake at 350 degrees for 1 hour. Uncover and bake about 30 minutes longer until bacon is crisp. Serves 6 to 8.

I have used fresh pork sausages in place of the ground beef and tomato soup diluted in place of the tomato sauce--and the dish still turned out very tasty.
