FLORIDA CARROT RING 
6 c. carrots, cooked & mashed
3 tbsp. sugar
1 c. cracker crumbs
Salt & pepper to taste
3 tbsp. onion, minced
3/4 c. green pepper, minced
1 1/2 c. celery, minced
3 tbsp. butter
2 eggs, beaten

Preheat oven to 350 degrees. Blend carrots, sugar, crackers, salt and pepper. Saute onion, green pepper and celery in butter; combine with carrot mixture. Stir in eggs. Pack mixture in 6 cup ring mold. Place mold in pan of hot water and bake for 45 minutes. Invert on plate; fill center with buttered green beans. Makes 12 servings.
