SWEDISH CAKE | |
1 c. raisins 1 c. water 1 c. butter 1 1/2 c. sugar 3 eggs 1 tsp. baking soda 1/2 tsp. salt 3 c. all-purpose flour 1/2 tsp. vanilla 1 c. chopped nuts 1 c. powdered sugar 2 or 3 tbsp. lemon juice Cook raisins and water 20 minutes. Set aside to cool. Mix butter and sugar. Add eggs; mix well. Add cooled raisins. Mix baking soda and salt into flour. Add to egg mixture. Add vanilla and chopped nuts. Spread on cookie sheet (12"x18") greased. Bake 25 to 30 minutes at 350 degrees until nicely brown all over. While still warm drizzle icing of powdered sugar and lemon juice over the top of cake. Serves 40. |
