HALIBUT ALYESKA 
2 lbs. halibut steaks, about 1 inch thick
1/2 c. mayonnaise
1/2 c. sour cream
2 tbsp. flour
1 1/2 tsp. lemon juice
1 tbsp. minced fresh onion (if using reconstituted, make this up 1 day ahead)
1/8 tsp. cayenne
1/2 c. grated cheddar

Rinse halibut and pat dry. Place side by side in 8 x 12 inch baking pan. Mix mayonnaise, sour cream and flour till smooth. Stir in lemon juice, onion and cayenne. Spoon the mixture over the halibut to cover top. Bake, uncovered, at 425 degrees for 12 to 14 minutes. Sprinkle cheese on top and bake for 2 minutes or until cheese is melted. Serve immediately.
