APPLE SOUR CREAM COFFEE CAKE 
1 c. softened butter
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 c. chopped apple
1 c. lite sour cream

Topping:

1/2 c. chopped nutmeats
1 tsp. cinnamon
5 tbsp. brown sugar

Have ingredients at room temperature. Use electric mixer at medium speed to cream butter and sugar until fluffy. Mix in low and add eggs, vanilla and sour cream. Mix well. Add flour, salt and baking powder. Blend well on low speed. Fold in apples by hand. Spray a 9 x 13-inch cake pan. Put batter in pan.

Combine topping ingredients and sprinkle over the batter.

Bake 40 to 45 minutes or until done in 325°F oven. Don't overbake. This cake is moist and delicious.
