SPICY CHILLED CHINESE NOODLES | |
1 lb. Chinese noodles 1 1/2 tbsp. Oriental sesame oil 1 med. cucumber, shredded 4 oz. baked ham, shredded 1/2 tsp. salt 8 oz. cooked chicken 1 carrot, shredded 1 1/2 tbsp. toasted sesame seeds SPICY SAUCE: 3 tbsp. soy sauce 1 1/2 tbsp. vinegar 1 tsp. sugar 1/2 c. chicken stock 3/4 tsp. Tabasco 3 tbsp. scallions, chopped 1 1/2 tbsp. sesame oil Bring a large kettle of water to a boil; add 1/2 teaspoon salt and the noodles. Boil 1 1/2 minutes, until the noodles are just done. Drain and rinse with cold water to cool. Drain well and toss with 1 1/2 tablespoons sesame oil. Mix the ingredients for the sauce and set aside. Shred the chicken, ham and vegetables. To serve, place the noodles on a platter. Surround with the meats and vegetables. Top with the sauce and sprinkle with the toasted sesame seeds. |
