SPLIT PEA SOUP 
1 1/2 qts. water
1 c. dried yellow or green split peas
Ham bone or 2 smoked ham hocks, or a sm. smoked sweet morsel
1 onion, finely chopped
1 bay leaf
1 tsp. salt
Dash of pepper
1/2 c. raw rice
1 potato, diced
2 shredded carrots

Soak peas in water overnight. The following day add meat and bring to a boil. Lower heat and cook until meat and peas are tender. Add bay leaf during cooking. Add potatoes, rice and shredded carrots and season to taste. Continue cooking until rice, potatoes and carrots are tender.
