MARIAN'S SPLIT PEA SOUP | |
4 lbs. quality shank ham 1 pkg. green split peas, washed & drained 1 pkg. yellow split peas, washed & drained 1 med. onion, chopped sm. 1 pkg. carrots, chopped sm. or shredded 1 stalk celery, chopped sm. Salt & pepper to taste Parsley 6 qt. water Trim off fat and skin of ham and rinse well. Bring ham to boil in 6 quarts water. Remove foam from top as it appears. When broth is clear add peas and onions. Simmer, stirring frequently until ham and peas are tender, 2 to 3 hours. Add carrots, celery, salt and pepper until they are tender. Add water sparingly if needed. When soup is done, remove ham and cut into bite size pieces and return to soup. Add parsley. This is an all day project, but well worth it. |
