SPICY MOLASSES COOKIES 
2 c. sifted all-purpose flour
Pinch of salt
1/2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. mace
1 1/2 tsp. ginger
2 1/2 tsp. allspice
1/2 c. soft shortening
1 tsp. orange or almond extract
1/2 c. granulated sugar
1/2 c. molasses
1 egg yolk

Sift into bowl all dry ingredients through allspice. In separate bowl cream shortening with extract until light and fluffy. Add sugar and molasses and mix until creamy. Add egg yolk and mix. Blend in flour mixture.

Chill mixture before rolling on lightly floured surface and with lightly floured rolling pin, roll dough to 1/4 inch thick. Cut with floured cutter. Place cookies 1/2 inch apart on ungreased cookie sheets. Bake 350 degrees F., 10-12 minutes. Yield: 5 dozen.
