SOFT GINGER COOKIES 
3/4 c. shortening
1 c. sugar
1/4 c. dark molasses
1 egg
2 c. flour
2 tsp. baking soda
1/2 tsp. ground ginger
1 tsp. cinnamon
1/2 tsp. salt

In large bowl, cream together shortening, 1 cup sugar; add molasses and egg. Beat well. Stir in flour, soda, salt and spices which have been mixed together. Mix well. Roll into 1 inch balls. Roll in granulated sugar. Place on greased cookie sheet 2 inches apart. Bake at 375 degrees for 6 to 9 minutes. Let stand 1 minute, remove and cool. Makes 4 dozen.
