MOLASSES COOKIES | |
1 c. light brown sugar 1 c. shortening 1 c. molasses (Br'er Rabbit, gold label) 4 c. (plus additional flour to make soft dough) 3 tsp. baking soda 1 c. buttermilk (or make sour milk with 1 c. warm milk and 1 tbsp. vinegar) 3 tsp. baking powder 1 tsp. salt In large bowl mix until light and creamy the brown sugar, shortening and molasses. Dissolve the soda in the buttermilk and add to mixture in bowl. Add baking powder and salt. Gradually beat in flour. When dough becomes too thick for beaters, turn dough out on heavily floured pastry board. Work in enough additional flour to make a soft dough to roll. Turn out on floured board. Roll, then cut into desired shapes with cookie cutters. Bake in preheated oven at 375 degrees 12-15 minutes. Makes about 7 dozen. Delicious with coffee or milk. |
