SUGAR FREE HOT COCOA MIX 
PREPARE THE DRY MIX:

3 cups instant non-fat dry milk (I use Carnation)
1 cup cocoa (Hershey's)
1 cup sugar substitute (Splenda)
1 cup non-dairy creamer (Coffee Mate)
1/2 tsp. salt
1 tbsp. vanilla extract

Using a food processor fitted with the blade attachment, add instant non-fat dry milk and process to a powder if it is in granular form. Add the cocoa, sugar substitute, non-dairy creamer and salt and pulse to combine well. While the machine is running, drizzle in the vanilla extract and process until combined.

Store dry mix in a 1/2 gallon glass jar (3 pint jars) or other sealable container.

TO SERVE:

1/3 cup sugar free hot cocoa mix
1 1/2 cups boiling water

Use 1/3 cup mix per 12 oz. (1 1/2 cups) boiling water.

Put mix into a mug, add enough water to make a slurry and mix well. Top off mug with remaining water and stir well to enjoy!

Makes 18 servings.

I love this recipe! It tastes like the real thing, and you can use any type of non-dairy creamer. I also like to add a little cinnamon.
