LAYERED BEEF VEGETABLE CASSEROLE | |
1 1/2 lbs. ground beef 1 c. sliced onion 1 c. chopped green pepper 2 tsp. salt 1 lg. potato, peeled and sliced (1/2 lb.) 1 c. thinly sliced carrots 1/3 c. long grain rice (uncooked) 1 (28 oz.) can tomatoes (or 1 qt. homecanned), mashed Preheat oven to 350 degrees. Saute ground beef, onions and pepper until beef is browned. Drain fat. Add salt and mix. Place sliced potatoes in bottom of 2 1/2 quart baking dish. Alternate with carrots, rice and meat. Pour mashed tomatoes over casserole. Cover; bake 2 hours. |
