ZUCCHINI SOUFFLE 
4 c. zucchini, grated
1 tsp. salt
1 c. Cheddar cheese, grated
1/4 c. Bisquick
4 eggs, well beaten

Let zucchini and salt stand 1 hour. Mix together Cheddar cheese, Bisquick and eggs. Dot with butter. Bake at 350 degrees for 25 minutes.
