POTATO BISCUITS 
1 c. flour
2 tbsp. shortening
4 tsp. baking powder
1 tsp. sugar
1 c. cold, mashed potatoes
1/3 - 1/2 c. milk
1/2 tsp. salt

Sift flour, baking powder, salt, and sugar. Add cold, mashed potatoes and shortening; mix lightly. Add milk to make a soft dough. Put onto floured board. Pat lightly to 1/2 inch thick. Brush with melted butter. Cut with 2 inch flour cutter. Place in greased pan. Bake in preheated oven at 400 degrees for about 20 minutes until golden brown. Serve at once. Yields 10 biscuits.
