SWEET POTATO BISCUITS 
1 c. mashed sweet potatoes
1 tbsp. shortening
1 tbsp. sugar
1 tsp. salt
1/2 tsp. baking soda
1 c. buttermilk
2 c. flour

Beat potatoes, shortening and sugar together until well blended. Sift the flour with the salt. Dissolve the baking soda in the buttermilk. Add the flour, alternately with the buttermilk to the potatoes.

Roll the dough out on a floured board to 1/2 inch thickness. Cut with cookie cutter and place on a greased baking sheet. Bake in a hot oven for 20-25 minutes. Yield: 24 biscuits.
