BLUE PETERS SWEET POTATO
BISCUITS
 
2-3 med. sweet potatoes
1/2 c. butter
1/2 c. sugar
2 tbsp. milk
1 tsp. salt
3 1/4 to 4 c. flour
4 1/2 tsp. baking powder
Cinnamon to taste

Boil, peel and mash potatoes. While mashed potatoes are hot, measure 1 1/2 cup in large bowl. Add butter, sugar, salt, and milk. Mix well. Sift together flour, baking powder, and cinnamon and add to potato mixture. Work with hands to make a soft dough. Chill dough, roll out, and cut into biscuits. Bake on greased cookie sheet on top shelf of 400 degrees for 15-20 minutes until light golden brown. Makes 12 biscuits.
