CITY CLERK SWEET POTATO BISCUITS 
2-3 med. size sweet potatoes
1/2 c. sugar
1 tsp. salt
4 1/2 tsp. baking powder
1/2 c. butter
1 tbsp. milk
3 1/2 - 4 c. all purpose flour

Boil two to three "Eastern Shore" sweet potatoes, peel and mash. While mashed potatoes are still warm, measure 1 1/2 cups into a large bowl. Add butter, sugar, salt and milk. Mix well. Sift together flour and baking powder. Add to the potato mixture. Work with hands to make a soft dough. Chill dough, then roll out and cut into biscuits. Bake until golden brown.

Makes 12 biscuits.
