JALAPENO CORNBREAD 
3 c. cornbread mix (2 pkgs. Gladiola or Equal)
2 1/2 c. cold milk
1/2 c. vegetable oil
3 eggs, beaten
1 lg. grated onion
3 tbsp. sugar
3 strips crisp, crumbled bacon
1 sm. jar pimientos
1 can creamed corn
1/2 c. jalapeno peppers, chopped fine
1 1/2 c. grated American cheese

Mix in order as given above. Bake in large, greased baking dish at 400 degrees for 25 to 30 minutes until golden brown. Do not undercook or it will be soggy. Cover what isn't used. It improves with age.
