PEARL'S SWEET POTATO BISCUITS 
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
Salt to taste
1/4 to 1/2 tsp. sugar
12 tbsp. butter
1 c. mashed freshly cooked or canned sweet potatoes
1/3 c. heavy cream, approximately

Preheat oven to 450 degrees. Sift together flour, baking powder, soda, salt and sugar into a mixing bowl. Add butter and cut it in with pastry cutter until it has the texture of coarse cornmeal. Stir in mashed sweet potatoes. Stirring constantly, add cream a little at a time, only enough to make a soft dough. Roll dough out on lightly floured board to 1/2 inch thickness. Using a 2 inch biscuit cutter, cut into rounds. Arrange together but not touching on lightly greased baking sheet. Bake until lightly brown, about 15 minutes. Makes about 3 dozen.
