DEBRA'S SWEET POTATO BISCUIT 
3/4 c. cooked, mashed sweet potatoes
1/4 c. melted butter
2/3 c. milk
1 1/4 c. all-purpose flour
2 1/2 tsp. baking powder
1 tbsp. sugar
1 tsp. salt

Preheat oven to 425 degrees. Mix sweet potatoes, melted butter and milk. Sift flour and measure, then resift with baking powder, sugar and salt. Stir the sifted ingredients into the sweet potato mixture.

Turn dough out on a floured board and toss it lightly until smooth on the outside. Roll or pat to 1/2 inch thickness and cut with floured cutter. Bake on a greased pan for about 15 minutes. Yields: 24 biscuits.
