BAKED YELLOW SQUASH 
6 med. yellow squash, cut into 1" pieces
1/2 c. minced onion
1/2 c. bread crumbs
2 eggs, lightly beaten
1 stick butter, melted
Salt & pepper to taste
1 tbsp. sugar

Preheat oven to 375 degrees. Cook squash in boiling water for 5 minutes. Drain well, cool, puree in blender. Transfer to bowl and add onion, half of the bread crumbs, eggs, half of the melted butter, salt, pepper and sugar.

Pour into baking dish. Pour on remaining butter and sprinkle with remaining bread crumbs. Bake at 375 degrees for 1 hour until squash is puffed and crumbs are browned.
