YELLOW SQUASH BAKE 
3 c. cooked, mashed winter squash
1 tbsp. brown sugar
1/2 tsp. salt
1/4 tsp. ground nutmeg
Pinch of black pepper
1/4 c. milk
1/4 c. butter, melted
2 eggs, separated
2 tbsp. water
1 tsp. pure vanilla

Preheat oven to 350 degrees. Combine squash, sugar, salt, nutmeg, pepper, milk, butter, egg yolks, water, and vanilla. Beat egg whites until stiff but not dry. Fold into squash mixture. Spoon into a greased 1 quart casserole. Bake, uncovered, 35 to 40 minutes. Makes 6 servings.
