BAKED YELLOW SQUASH | |
2 lbs. squash 1/2 onion, salt and pepper to taste 2 tbsp. butter 1 egg 1/2-3/4 c. soda cracker crumbs Cook squash, onion with salt and pepper, and butter with a small amount of water until tender. Mash squash, add 1 beaten egg, and 1/2 to 3/4 cup soda cracker crumbs; mix all together and put in baking dish. Bake 30 minutes at 350 degrees. Can put some cracker crumbs on top, if desired. Yield: 6 to 8 servings. |
