BATTLETOWN INN BAKED YELLOW
SQUASH
 
7 sm. yellow squash
1 med. onion, diced
1/2 c. cream (half and half)
1/4 c. saltines (6 or 7), crushed
2 tbsp. butter

Slice, boil, drain and mash squash. Saute onion in butter. Add cream and crackers and then squash. Grease casserole and add above. Dot with butter and bread crumbs. Bake 1/2 hour at 400°F.

My mom was a waitress at The Battlefield Inn back in the late 70s. She used to make this when squash was in season. Super yummy!
