DIABETIC YELLOW EYE BAKED BEANS 
1 lb. dry yellow eye beans
1/4 lb. salt pork
1/4 c. molasses
1 tsp. dry mustard
1/4 tsp. pepper
3/4 tbsp. salt
1/2 med. onion

Soak beans overnight in cold water. In the morning parboil beans until skins cracked when blown upon. Cut onion in quarters and place in bottom of bean pot. Add parboil beans. Cut rind of the salt pork to the depth of 1/2 inch and place on top of beans. Mix sugar, molasses, mustard, pepper, salt, with 1/2 pint of boiling water. Pour over pork and beans. Add water as necessary to cover. Bake at 300 degrees for 6 hours or more, adding water as beans cook.
