BAKED YELLOW SQUASH 
2 c. squash, cooked
3/4 stick butter
2 eggs
1 tsp. salt
1/2 tsp. pepper
1 c. onion, chopped
1 c. Cheddar cheese, grated
1 c. evaporated milk
2 c. cracker crumbs

Mash cooked squash. Add other ingredients in order. Mix well. Pour into a greased baking dish. Bake at 375 degrees for about 45 minutes. Serves 6 to 8.
