LOUISIANA BAKE SQUASH 
BAKED YELLOW SQUASH LOUISIANA:

8 med. yellow squash
1/2 c. chopped onion
8 oz. sour cream
1/2 tsp. salt
1/4 tsp. pepper
8 slices bacon, cooked & crumbled
1/4 tsp. basil
1 c. soft bread crumbs
1/2 c. grated Cheddar cheese
1/3 c. melted butter
1/2 tsp. paprika

Wash squash, trim off ends. Cook squash and onion in boiling salted water until tender, drain and mash. Combine with sour cream, salt, pepper and basil. Pour into greased 2 quart casserole. Combine bread crumbs, cheese, butter and paprika, sprinkle over squash mixture. Top with bacon.

Bake at 300°F for 30 minutes.

6-8 servings.
