EVAN'S CHICKEN AND VEGGIE STIR
FRY
 
2 boneless and skinless chicken breasts, cut into chunks
3 cups rice
1 yellow pepper, chopped
1 or 2 large carrots, chopped
1 cup onion, cut into strips
1 1/2 cups Mr. Yoshida's Original Gourmet Sweet Teriyaki sauce

Start rice first. Use a rice cooker for best results, following the manufacturer's directions. While the rice is cooking, it is best to do all the chopping and preparation. In a large Wok or frying pan, combine pepper, carrots, onions, chicken and gourmet sauce.

Let this cook for about 15 minutes, stirring occasionally. Don't let it cook too long; check your vegetables to see that they are still crunchy.

Serve over rice when chicken is fully cooked.
