ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 tbsp. vanilla
1 c. oil
3 c. flour
1 tsp. salt
1 tbsp. cinnamon
1 1/2 tsp. baking powder
1 tsp. baking soda
2 c. ground, fresh zucchini
1/2 - 1 c. chopped nuts

Beat eggs into a froth and add sugar, vanilla and oil. Mix well. Mix dry ingredients together and add to egg mixture.

Pour into well greased bread pans. Makes 2 loaves 9x5 inch pans or 3 loaves 7 1/4 x 2 1/2 inch pans. Bake at 350 degrees for 1 hour to 75 minutes.
