MICROWAVE CHOCOLATE CHIP COOKIES 
1/4 cup vegetable oil
1 cup dark brown sugar, packed
2 eggs
1 tsp. vanilla
1 1/2 cups Bisquick baking mix
1/2 cup chocolate chips
1/4 cup chopped nuts

Stir sugar, eggs and vanilla into oil. Blend until lumps dissolve. Stir in Bisquick until blended. Fold in chocolate chips and nuts.

Microwave until cooked through. This will take a different amount of time in each microwave but should take 2-4 minutes on medium setting (usually about 3 1/2 minutes). If you overbake, they will be brittle.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Not quite the same as baking cookies in the oven, but still satisfying (and slightly more eco-friendly?). I found that the longer I microwaved the better, the full four minutes worked best for me. Thanks!

Jenny, you can make some master mix, which is a Bisquick substitute.
