MARIE'S BEST BROWN RICE EVER
(EASY!)
 
This is very low fat and good for you but oh so good!

1 cup brown rice (regular, not instant)
1 medium onion, chopped
1 (4 oz.) can sliced mushrooms, drained
1 (10 oz.) can beef broth soup
1 (10 oz.) can beef consomme
1 tbsp. butter
salt and pepper, to taste

Preheat oven to 425°F.

Wash and add brown rice to casserole dish. Add chopped onions and mushrooms. Shake and pour both cans of soup on rice. Add about a tablespoon of butter on top and season with salt and pepper. Do not stir!

Put in a preheated oven covered at 425°F for 25 minutes then uncover for another 20 minutes and serve.
