HERBAL COATED ROAST LEG OF LAMB 
1/2 c. Dijon mustard
1 clove garlic, minced
2 tbsp. soy sauce
1 tsp. rosemary or thyme
1/4 tsp. ginger
2 tbsp. olive oil
6 lb. leg of lamb

Blend together all ingredients except olive oil and lamb. Adding oil a few drops at a time, beat until consistency of mayonnaise. Coat lamb. Place on rack of roasting pan and let stand several hours at room temperature. Roast at 350 degrees for 1 1/2 hours. Serves 6-8. Good with South African Raisin Rice and Greek salad.

I loved the flavor of this recipe, but I must say the cooking time was off TREMENDOUSLY. We followed the directions to a T and still, the leg wasn't done even after 4 hours of cooking- we ended up having to pan fry it in pieces! Definitely a dish to try if you have lots of time on hand to wait...
