HERBAL COATED ROAST LEG OF LAMB | |
1/2 c. Dijon mustard 1 clove garlic, minced 2 tbsp. soy sauce 1 tsp. rosemary or thyme 1/4 tsp. ginger 2 tbsp. olive oil 6 lb. leg of lamb Blend together all ingredients except olive oil and lamb. Adding oil a few drops at a time, beat until consistency of mayonnaise. Coat lamb. Place on rack of roasting pan and let stand several hours at room temperature. Roast at 350 degrees for 1 1/2 hours. Serves 6-8. Good with South African Raisin Rice and Greek salad. |
