LEG OF LAMB ROAST 
1 leg of lamb
3 cloves garlic
1 tbsp. salt
1/8 tsp. pepper
1 tbsp. oregano
1 tsp. thyme
2 lemons, juice only
1 c. boiling water

With small knife, make incisions and insert halved cloves of garlic into lamb. Rub salt, pepper, oregano, and thyme. Roast at 425 degrees for 30 minutes. Reduce heat to 350 degrees and bake 2 hours longer. Add lemon juice to water and baste lamb. Then bake for last 1/2 hour. If desired, add par boiled potatoes and bake 15 minutes longer.
