FRESH THYME SALAD 
This salad is great on some toasted French bread. Use at parties or as a snack anytime of the day.

2 bunches thyme (off the stems)
1/2 medium size tomato, diced (about 1/2 cup)
1 medium red onion, diced fine (about 1/3 cup)
2 tsp. good Mediterranean extra virgin olive oil
2 tsp. fresh squeezed lemon juice
salt and pepper, to taste
Sumac, to taste (optional)

Take thyme leaves off of the stems and wash with cold water. Drain thyme and let stand for 5 minutes.

In a preparation bowl combine thyme, tomatoes and onions. Mix with a spoon then pour olive oil over the mix while still mixing to coat evenly. Also add lemon juice and mix. Add just a pinch of salt and pepper.

P.S. If you have Sumac you will want to add it to the mixture before you add the olive oil.
