FRUIT CRUNCH CAKE 
1 c. flour
3/4 c. uncooked oats
3/4 to 1 c. brown sugar
1/2 c. (1 stick) melted butter
1 tsp. cinnamon
1/4 to 1/2 nuts
3/4 to 1 c. sugar
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla
4 c. fruit, rhubarb, blackberries, blueberries

Mix crumb mixture, put 1/2 on bottom of 7 x 11 baking dish or 9 inch square pan. Add 4 cups of fruit. Cook sugar, cornstarch, water and vanilla together until thick. Pour over fruit. Top with remaining crumb mixture. Bake at 350 degrees for 1 hour, less if needed. Top with ice cream. Yummy!
