QUICK COCOA CAKE | |
1 1/2 c. all purpose flour 1 c. sugar 3 tbsp. cocoa 1 tsp. baking soda 1/2 tsp. salt 1/3 c. salad oil 1 tbsp. vinegar 1 tbsp. vanilla 1 c. water Cocoa Fluff Topping or Chocolate Crunch Topping Heat oven to 350 degrees. Grease square pan, 9 x 9 x 2 inches. Measure all ingredients except topping into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 1 minute on high speed, scraping bowl occasionally. Pour batter into pan. Bake until wooden pick inserted in center comes out clean, 25 to 30 minutes. Serve warm, with Cocoa Fluff Topping. Do not use self-rising flour in this recipe. Note: Ingredients can be mixed in the pan: Measure dry ingredients into ungreased pan; stir with fork. Add remaining ingredients; mix until smooth. NOTE: When you don't want the world to know how hurried you are, Quick Cocoa Cake is the dessert for you! It is delicious severed warm. And what is the quickest topping you can think of? Well, a dusting of confectioners' sugar takes only a minute, and looks and tastes great. Scoops of ice cream take very little longer. Get a jazzy effect by combining different colors and flavor. Or try a quickie that comes out looking like honest-to-goodness frosting. Break milk chocolate candy bars into small pieces; arrange on hot cake. When they melt, spread them over the top. |
