CHICKEN STACK-UP SALAD 
2 c. cubed cooked chicken
1/2 tsp. curry powder
1/4 tsp. salt
1/4 tsp. paprika
pepper to taste
2 to 3 c. shredded lettuce
1 large cucumber, sliced
1 c. macaroni, cooked and drained
1 large green pepper, chopped
1 1/2 c. mayo or salad dressing
2 tbsp. milk
2 tbsp. lemon juice
2 tomatoes, cut into wedges
2 tbsp. snipped parsley

In mixing bowl, combine chicken, curry, salt, paprika and pepper. Toss to mix well. In a clear glass salad bowl, layer lettuce, coated chicken, cucumber, macaroni and green pepper.

Stir together mayo, milk, lemon juice, 1/2 teaspoon salt and pepper. Spread mayo mixture over the salad. Cover; chill several hours or overnight. Garnish with tomato wedges and parsley. Toss!

Makes 8 servings. Recipe may be cut in half.
