CRUSTLESS CHEESE QUICHE 
10 eggs
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
Several dashes hot pepper sauce
1/2 c. melted butter
1 1/4 c. finely chopped onion
1 (16 oz.) container cottage cheese
12 oz. sharp cheddar cheese, grated

In large bowl beat eggs well. Add flour, baking powder and salt. Saute onions in butter until tender. Add eggs and flour, stir in cheeses, blend well. Add hot pepper sauce and pour into greased 9x13 inch pan.

Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake for 20-30 minutes or until center is firm. Cut into squares and serve after allowing to set for a few minutes. Serves 9 for brunch.
