MUSHROOM - TOPPED PORK CHOPS | |
4-6 pork chops, boneless, 3/4" thick 1 tbsp. butter 1 c. finely chopped mushrooms 1 tbsp. butter 1/2 c. finely chopped parsley 1/3 c. finely chopped red onion 1 egg 1 tsp. salt, if desired Dash pepper 2-3 tbsp. grated Cheddar cheese Heat 1 tablespoon butter in pan. Brown chops and place in oven proof dish. Saute mushrooms in 1 tablespoon butter until no longer moist. Cool. Mix mushrooms, parsley, onion, egg, salt and pepper. Place filling on top of chops. Bake at 350 degrees about 30 minutes, then sprinkle with cheese and bake about 10 minutes longer. Check for doneness at side of chop. The juices should run clear when pierced with a fork. Serve with a salad or sliced, herbed tomatoes and rice, or boiled new potatoes. Serves 4-6. |
