MUSHROOM PORK CHOPS 
4 boneless chops, 3/4 inch thick
1 c. finely chopped mushrooms
1/3 c. chopped red onion
1 tsp. salt and pepper
1 tbsp. butter
1/2 c. chopped parsley
1 egg
2 to 3 tbsp. grated Cheddar

Heat butter in a pan and brown chops on both sides, then place in an ovenproof dish. Saute onions in 1 tablespoon of butter until they are no longer moist. Cool.

Mix mushrooms, onion, egg and salt and pepper. Place filling on top of pork chops and bake at 350 for 40 minutes. Sprinkle cheese after 30 minutes of cooking time.
